Coconut Creamsicle Berry Pops

Growing up, I would eat orange creamsicles like they were going out of style in the summertime. Of course, my parents, nor I knew how bad they really were for you. Just take a look at the ingredients:

Orange Creamsicle: Orange Sherbet: nonfat milk, water, liquid sugar (sugar, water), high fructose corn syrup, maltodextrin, corn syrup, milk fat, orange juice concentrate, citric acid, malic acid, mono and diglycerides, guar gum, polysorbate 80, locust bean gum, natural flavor, ascorbic acid, annatto (for color), Low Fat Ice Cream: nonfat milk, liquid sugar (sugar, water), corn syrup, milkfat, whey, maltodextrin, high fructose corn syrup, propylene glycol monoesters, cellulose gum, mono and diglycerides, cellulose gum, natural flavor, locust bean gum, polysorbate 80, guar gum, carrageenan, vitamin A palmitate 

See! They are full of refined processed sugars, gut destroying emulsifiers like carrageenan and cellulose gum, GMOs, and all sorts of other non-real food ingredients no one should have to consume to enjoy a summertime treat! This is why, now, I love making these Coconut Creamsicle Berry Pops. They are dairy free, use seasonal fruit, and are absolutely deeeeeelicious!

Food Babe's Coconut Creamsicle Berry Pops

Serves: 4
Ingredients
  • 1¼ cups coconut milk (culinary or fresh - not the one with tons of added ingredients)
  • ¼ cup freshly squeezed orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons maple syrup, coconut nectar or honey
  • ½ cup mixed berries (you might want to dice the strawberries if they are big)
  • pinch sea salt
Instructions
  1. Place all of the ingredients into a large pitcher or bowl and mix well to combine.
  2. Fill popsicle molds to the top and place the popsicle stick in the mold.
  3. Freeze in freezer for at least 2 hours or overnight. Enjoy!

**Please choose all organic ingredients if possible.**

  1. I noticed that you don’t blend the ingredients in a blender before filling the popsicle molds and I’m a little surprised. Do you think it works better the way you do it (just mixing it in a bowl), or would you recommend blending, especially if the fruit is chunky? (Often when I make a smoothie with fresh organic fruit and maybe a vegetable or two with my blender, I freeze some in popsicle molds for my children.)

    1. I like keeping the fruit whole – but you can certainly blend them, it’s up to you!

    1. Highlight and copy and “paste special” into a Word doc. No need to print. This delightful recipe is now in my popsicle file.

      FOOD BABE’S COCONUT CREAMSICLE BERRY POPS Serves: 4
      Ingredients

    2. When your print option opens (box that asks how many copies to print) look at bottom left for a button that has PDF, click that button, gives you the option to:
      Save as a pdf. Select that another box will open select where to save the file on your computer and click save. No need to print. Happy 4th!!

  5. Polysorbate 80 and Propylene Glycol! Gross! These are chemicals that all too often found in personal care products..but in a creamsicle? Thanks for the delicious alternative! Will definitely try!

    1. Amazon has some good silicone popsicle nolds. they don’t look like traditional popsicles, but they work.

    What brand of coconut milk would you suggest? Would a natural food store be more likely to carry it?

    1. That is what I am still trying to figure out. There is no way I would be industrious enough to make coconut milk in my juicer or blender. The canned brands look like they have some unhealthy ingredients. Not sure what to use.

      1. I THINK she means a (non BPA) canned variety– you can find them in the Asian isle of many stores. Many of the beverage varieties (the type you get from the dairy case or shelf) have additives (carrageenan, foremost).

  7. Adding in a little unsweetened, shredded coconut would make it taste like a Frozfruit. Yum!

  8. For Pop containers, is it ok to use small round paper cups , then stick store bought Pop sticks in side..
    Turm them down with stick sticking up..

    1. The turning a cup upside down idea works, but the sticks fall to the side so the popsicle gets a little cockeyed. I put a strip of masking tape across the top with a slit in it and stuck the popsicle stick through that.

      Worked like a charm.

  11. Fabulous! And just what I’ve been looking for. I love an ice cream treat and even when I find healthy ones they are usually huge. This is perfect, now I can make healthy icecream treats just the size I want. Off to the store today to buy popsicle molds.

Please clarify if it’s coconut milk in the can that is often used for curries or if it’s something like the unsweetened So Delicious coconut milk in the refrigerated carton. I suspect it’s the one in the can for a creamier texture. What do you say Assistant to Food Babe (Pam)? 🙂

  15. Made these and they are super yummy! I used Natural Value brand coconut milk – I’m assuming that’s what she means. I also doubled the recipe and used the blender to mix everything up. I pulsed, so there are still some blueberry bits. I have the Norpro Frozen Ice Pop mold. It’s totally worth the investment and you can make 10 Popsicles at a time. Thanks for the great recipe!

  16. In the photo it looks like there are coconut chunks in the pops. I have a fresh coconut, so perhaps scooping everything out and mixing all in a blender, with the coconut water, then adding berries, would work? Would love to try! Yum!

CAN ALWAYS COUNT ON YOU AND THE TEAM COMING TO THE RESCUE!!! my mom is hung up on those poisonous popsicles you buy at dollar store…AND TO TOP IT ALL OFF, SHE HAS DIABETES BUT BUT BUT HER NUTRITIONIST SAID THE POISONOUS ONES ARE GOOD FOR HER YO EAT…BULL!!!     just dropped in to say that carrageenan and cellulose gum are not emulsifiers. Also I’d like to ask what evidence you have that emulsifiers are bad for our health.

  22. Glad to see you recommend getting everything organic. Many times people say they can’t afford to buy organic–I say I can’t afford NOT to by organic. Simply be prudent when you shop and don’t buy everything you see. Stick with vegetables and fruit mainly,

    I was wondering if you can make your own coconut milk for these, and how would you make homemade coconut milk (& almond milk)? I want to try doing that because I have not been able to find any already made that doesn’t have any weird additives in them. I also want to try to make my own ice cream with homemade coconut milk & almond milk, but I’m not sure how. (I got an ice cream make for Christmas last year & really want to try it out.)

  24. I couldn’t wait to try this so I went to every store in the area looking for coconut milk. I couldn’t find any that didn’t have guar gum in it. I looked it up, found out it is a thickener from a plant, but am unsure is it safe? Help, does anyone know?

  27. I don’t have popsicle molds and, quite honestly, the kids leave dirty sticks around the house to make me crazy 😛 Can I make this in a shallow container and scoop it out like ice cream?

    Thank you so much for this recipe! Ours are in the freezer right now! I consider myself pretty good in the kitchen, but there was one part of this recipe that I wondered about. I use your recipe for making my own coconut milk. Is it THAT homemade coconut milk that I am supposed to use in this recipe or an entire can of the un-dilluted milk? I know that this question may not make sense, but if you can help in any way, I would appreciate it.

  30. I see u use a lot of coconut products. When I change to this my cholestrol went up. Any ideas. ?????So i stopped drinking it an using the oil an changed to almond products. I will have to see if I make it fresh maybe that would make a difference in fat content. I love your website an have changed my eating plan to all organic. Thanks
